Pumpkin cookies?

Anyone tried pumpkin cookies? Got a recipe? I've never tried them myself. Post it here!

Indeed! They're delicious! Made some the other day and threw in some peanutbutter aswell, and man, that was the best thing i've ever tasted cookie wise.
Here's the recipie:
Ingredients
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/2 teaspoon salt
1/2 cup butter, softened
1 1/2 cups white sugar
1 cup canned pumpkin puree
1 egg
1 teaspoon vanilla extract
2 cups confectioners' sugar
3 tablespoons milk
1 tablespoon melted butter
1 teaspoon vanilla extract
Directions
Preheat oven to 350 degrees F (175 degrees C). Combine flour, baking powder, baking soda, cinnamon, nutmeg, ground cloves, and salt; set aside.
In a medium bowl, cream together the 1/2 cup of butter and white sugar. Add pumpkin, egg, and 1 teaspoon vanilla to butter mixture, and beat until creamy. Mix in dry ingredients. Drop on cookie sheet by tablespoonfuls; flatten slightly.
Bake for 15 to 20 minutes in the preheated oven. Cool cookies, then drizzle glaze with fork.
To Make Glaze: Combine confectioners' sugar, milk, 1 tablespoon melted butter, and 1 teaspoon vanilla. Add milk as needed, to achieve drizzling consistency.

Yup. Its easy enough to make, all it is is white cake mix with black and orange sprinkles mixed into it.

Do those cookies come out soft, or crispy? I wanna make some soft ones that I can make into sandwiches with cream cheese icing in the middle.

They come out fairly soft. Like I said above, I even add a small amount pumpkin to my peanutbutter cookies to make them softer as well, as they become famously hard after baking. You just have to watch them closely and take them out about 3 minutes before the recipe says too so they don't continue to cook after they've been removed from the oven.

I'm looking for a recipe that comes out moist and cake-like, but not crumbly. I want it to hold together well when you bite into it, but be soft enough so the creamy filling doesn't get all mashed out with the first bite.
Anyway, I'll give it a try!
